- 2 lbs sweet potatoes
Instructions
- Clean your hands and table tops, and sterilize all the equipment.
- Wash and peel the sweet potatoes.
- With a mandoline slicer or sharp knife, cut them into even slices, or dice them into small cubes.
- Blanch the sweet potatoes by boiling them for 2–3 minutes, then immediately place them in ice-cold water to stop the cooking process. This will help preserve their color and nutrients.
- Use cold water to rinse them and let excess water run off of them by placing them in a strainer.
- Pat the sweet potatoes dry with a paper towel to remove as much moisture as possible.
- Arrange the sweet potato slices or cubes in a single layer on a dehydrator tray, leaving space between each piece.
- Set the dehydrator to 125–135°F (52–57°C) and let it run for 8–12 hours or until the sweet potatoes are dry and crispy.
- Once the sweet potatoes are dehydrated, let them cool completely and store them in an airtight container or zip-lock bag in a cool, dry place.
